If so, put about a pound of shredded butt(shoulder is better) in a skillet with @ 2 Tbls. olive oil. Add one small can Rotel tomatoes (regular or hot?) Start simmering covered. Add a small chopped onion. (Peppers/to taste)
If you like rice and do not have an electric rice cooker, I suggest you look at them (@$15). They do not stick if you use care. However you make rice, make some and please, please use several chunks of garlic in the process. Heavenly smells coming from the kitchen already.
In a large skillet, heat a bunch of that Bacon Grease from that jar hidden at the back of the bottom shelf of the fridge. Otherwise use veg oil or olive oil, duh. Fry up 1 egg per person, preferably over easy.
Plate the meal by serving the rice, topping it with a fried egg, and then the pork mixture on the side, with a little tomato gravy drizzled over the rice. Your favorite bread, or better yet, tostones (fried green plantains) from Publix freezer.
