I got to see one of these in action last week in Miami. 60 pound pig, ears, feet and tail included. No apple. Basically a wood box on wheels lined with galvanized metal, drip pan covering whole bottom, brackets holding a rack suspended in box, large pan for coals covering the top. Used 20 pounds of charcoal.
The chef clipped a prepared pig to the rack and hung him inside. Covered the top with the coal pan, filled it with hot charcoal and in 4 hours start eating. Much fun as a novelty and the meat was good,,,,, but,,but, way short of the flavor and texture of slow-smoked butt or Picnic. It lacked for seasoning and smoke. I was going to make that suggestion, but I couldn't say "bland" in Espanol.
