We have been catching our share of the Stripe, Spot Tail, Catfish & Crappie lately and was hoping to hear from everyone their best grilling recipes for fish. Please be detailed and who knows maybe we could start a Lake Martin cookbook oneday.

  PS: I could furnish the onion ring recipe... lol

Fish generally gets an olive oil and lemon juice marinate overnight, then coat both sides with cajun seasoning, and cook over Cowboy Mesquite charcoal (spotty quality at times) or Royal Oak Hardwood charcoal on a Primo - I run it at 375 degrees.  Cook time varies with thickness...

    Just got a smoker and cooked 3 racks of ribs and 4 chicken quarters.. It was incredible.

Health cuts me way back. Still grilling, just not as much.  Gave smoker to son in law who is using it like crazy. Happy to see it being used. But at least the kid could send me some of what he cooks. btw, he is a chief, graduated from Sullivan in Louisville where they still reside.

Its one of those about 3 1/2 tall shaped like a pill. It has a temp gauge on the front. It has 2 grilling areas inside. one is up high and the other closer to the coals. It has a water bucket inside as well.

You are describing? Not usually designed for fish, unless it can break down to grill fish??
