I have been using the expensive wood chips on my Big Green Egg to flavor the meat.
I found a suggestion to use hickory nuts instead. I have a tree on my lot that has dumped a bumper crop of nuts this year.
My first attempt worked great. I did some chicken and beef and I loved the flavor.

Whole nuts along with the casing, or do you crack them open?

I don't use the husks kist the nuts. I don't crack them.

I used husks ONCE. Turned my whole turkey jet black. Tasted ok...if you like powerful hickory flavor. Would not recommend husks! Nuts ok.

I recently had to take down a small hickory tree. While it was still green I used my compound saw to cut it into small circular chips. Put the chips in zip lock bags and in the freezer. Will let you know how well they work.
